SPICY SWEET POTATO SOUP

Every serving of this creamy soup a day’s worth of Vitamin A!

2 tsp. olive oil or vegetable oil

3 green onions, thinly sliced

3 garlic cloves, thinly sliced

1 Tbsp. finely chopped fresh garlic

1/1/4 # sweet potatoes, peeled and thinly sliced (3 1/2 cups}

2 cups reduced sodium chicken broth

1 1/2 cups water

1/2 tsp. salt 1/8 tsp. allspice 1/8 tsp ground red pepper

4 tsp. fresh lime juice

2 Tbsp, fresh cilantro chopped

Heat oil in a large saucepan over low heat. Add onions, garlic and ginger. Cook, stirring until onions soften, about 3 minutes. Stir in sweet potatoes, broth, water, salt, allspice and red pepper. Bring to a boil over medium heat. Reduce heat to low, cover and simmer for 20 minutes, or until sweet potatoes are very tender. Remove saucepan from heat and stir in lime juice. Transfer mixture to food processor or blender and whirl until very smooth, working in batches if necessary. Spoon into four bowls and garnish with cilantro. Serve at once. 4 servings
